4.0 Food and Water

 

HOW TO BREW COFFEE

  1. Plug in Bun coffee maker.
  2. Place clean coffeepot under coffee dispenser.
  3. Place the filter holder in the filter compartment.
  4. Pour one plastic coffee pitcher of cold water into the top of the Bun coffee maker. Water will be dispensed immediately, cleaning out the machine.
  5. Wait until all water has passed through coffee maker and discard.
  6. Place clean paper filter in filter holder.
  7. Place 6 heaping teaspoons of ground coffee (from the freezer) in paper filter.
  8. Place the filter holder in the filter compartment.
  9. Place clean coffeepot under the coffee dispenser.
  10. Wait 20 minutes for water to heat.
  11. Pour one plastic coffee pitcher of cold water into top of Bun coffee maker. Coffee will be dispensed immediately.
  12. Set out cups, creamer, sugar, non-sugar sweetener, stirrers as required.
  13. Turn on pot warmers and make additional pots of coffee as required.
  14. Clean filter compartment and pots after use. Place dry paper towel in each pot.
  15. Store cups, creamer, sugar, non-sugar sweetener and stirrers.
  16. Notify appropriate agency (NEST Command, Fire Brigade Board of Directors) of supplies needing replacement.

 

HOW TO ARRANGE FOOD - SNACK FOODS

  1. Obtain copy of NEST Emergency Supplies – Food in Container list from La Honda Facility Operations folder in file cabinet.
  2. Check inventory of food in Emergency Container at Fire House.
  3. Retrieve snack foods from container and set out for workers. Include granola bars, fruit, fruit juice boxes and soft drinks.
  4. Arrange for additional snack food items from local sources or from relief organizations.
  5. Arrange with NEST Command to have snack food sent to shelter and other remote work sites as requested.
  6. Clean utensils, counters etc. and store or donate unused food items.
  7. Notify appropriate agency (NEST Command, Fire Brigade Board of Directors) of supplies needing replacement.

 

HOW TO ARRANGE FOOD - MEALS

  1. Determine whether meals will need to be provided over the next 48-72 hours. If meal service is required for this extended time, meals should be planned to vary the menu.
  2. For any meal, determine number of people to be fed. Include emergency workers and shelterees. Add an additional 10% to provide for law enforcement and highway workers and "drop-in" victims.
  3. Obtain copy of NEST Emergency Supplies – Food in Container list from La Honda Facility Operations folder in file cabinet.
  4. Check inventory of food in Emergency Container at Fire House.
  5. Check inventory of plates, bowls, cups, napkins, forks, spoons, knives, and trash bags.
  6. Plan breakfast using fruit, cereal, bread, butter, peanut butter, jam, coffee, tea and milk
  7. Plan lunch using light soup, sandwiches, fruit, coffee, tea and soft drinks
  8. Plan dinner using soup, chowder, stew, spaghetti, chili, bread, butter, peanut butter, jam, coffee, tea, milk and soft drinks.
  9. Retrieve supplies from container. Prepare food as appropriate and serve from kitchen.
  10. Arrange tables, chairs and trash cans in Fire House for meal service.
  11. Arrange with NEST Command to have food sent to shelter and other remote work sites as requested.
  12. Maintain a log of meals served, including date, number of people, location and whether they were victims or responding personnel (Include their organization.) Meal Log forms are in the La Honda Facility Operations folder in file cabinet.
  13. Arrange for additional food items and utensils from local sources or from relief organizations.
  14. Clean food preparation and serving utensils after each meal. After serving the last meal, arrange for storage of supplies and storage or donation of unused food.
  15. Notify appropriate agency (NEST Command, Fire Brigade Board of Directors) of supplies needing replacement.

 

HOW TO PROCURE FOOD FROM RED CROSS - MASS CARE

  1. Ascertain from the Incident Commander, Shelter Manager (or other assigned officer) the Mass Care needs. If the incident is short duration, will meals be required or are drinks and "snack foods" sufficient? If the incident is longer duration, what meals will be required?
  2. Ascertain how many people are involved. Do not forget law enforcement, public works, utility company employees, victims, and Red Cross and other relief agency workers.
  3. Telephone the Red Cross office in Burlingame.
  4. Explain the situation to the Red Cross representative and tell them that the Incident Commander has requested Red Cross assistance.
  5. Arrange to have food delivered if possible.
  6. Regardless of the weather, arrange for soft drinks, fruit juices, and Gatorade-type drinks in addition to the coffee, tea, instant cocoa and bottled water. Do not forget to request paper cups, stirrers, napkins, creamer and sugar.
  7. If breakfast is required, arrange for breakfast sandwiches, orange juice, doughnuts and/or pastry. Do not forget to request paper plates, cups, any plastic utensils required and any serving utensils needed.
  8. If lunch is required, arrange for sandwiches (both with meat and vegetarian), fresh fruit and cookies. Do not forget to request paper plates, cups, any plastic utensils required and any serving utensils needed.
  9. If dinner is required, arrange a hot meal such as pasta, bread and salad. Do not forget to request paper plates, cups, any plastic utensils required and any serving utensils needed.
  10. If "snack food" is required, arrange for candy bars, trail mix, fresh fruit, crackers, granola bars, instant soups (with hot water).
  11. If the food is obtained locally, obtain from the Red Cross suggestions of what to purchase, how much and where to shop. Also discuss how payment should be made and what Red Cross expects to pay. When ordering food, set up accounts whenever possible, requesting itemized invoices. Use the ARC Disaster Supply Requisition (ARC #6409 from the La Honda Facility Operations folder) to track materials ordered and received. Cash/check may be obtained from the Fire Brigade Board of Directors.
  12. Retain accompanying receipt for reimbursement/payment at end of incident.
  13. Record all relevant data on the Food Procurement Phone Log form in the La Honda Facility Operations folder in file cabinet.
  14. As food is delivered, log food receipt including driver’s name, time, date and completeness of order on Food Procurement Phone Log form.

 

HOW TO PROCURE FOOD FROM OTHER AGENCIES

  1. A) Call Salvation Army, OES or other agencies to obtain a "food drop".
  2. Record all relevant data on the Food Procurement Phone Log form in the La Honda Facility Operations folder in file cabinet.
  3. Log food receipt including driver’s name, time, date and completeness of order on Food Procurement Phone Log form.
  4. If food is purchased locally, arrange for personnel to travel to local sources. Either arrange credit or payment.
  5. Retain accompanying receipt for reimbursement/payment at end of incident.

 

HOW TO LIGHT STOVE

A) Ensure all knobs are set to OFF.

B) Remove griddle, oven trays, burner covers, etc.

C) Reach behind the stove on the left side and turn the valve 90 degrees.

D) Light all pilot lights (one for each burner and two in the front under the griddle) by turning the appropriate knob to LOW, and lighting with a match.

E) Light oven by holding door open, pressing and holding the button on the pilot assembly (front and center). Light a match and light the pilot light. Keep pressing the button for about a minute as the flame burns, then release the button. If the flame dies, repeat this step holding the button longer.

F) To TEMPORARILY shut off the stove, turn appropriate knob(s) OFF.

G) When finished with the stove, turn all knobs to OFF and turn off valve behind stove.

BOTTLED WATER

  1. Contact OES at County EOC. Describe nature of problem and request a water delivery. Indicate quantity of water required.
  2. Contact water suppliers in the yellow pages including Arrowhead, Black Mountain Spring etc.
